Healthy Low Fat Shrikhand Sundae Recipe – A Nutritious Festive Delight

Enjoy a guilt-free dessert with this Low Fat Shrikhand Sundae, a creamy and fruity treat perfect for festive occasions or a wholesome snack. This recipe combines the richness of hung Greek yogurt with the natural sweetness of grapes, strawberries, kiwi, and apple, layered with chia seeds for added nutrition. The hint of saffron and cardamom elevates the flavors, making this sundae both indulgent and healthy.

Ingredients:

  • 200 g Greek yogurt
  • 2 tsp sugar substitute
  • A pinch of saffron strands
  • 2 g green cardamom
  • 1/2 Apple, diced
  • 1/2 Kiwi, diced
  • 2 Strawberries, diced
  • 10–12 Grapes, halved
  • 30 g chia seeds
  • 150 ml milk

Method:

  1. Soak chia seeds in milk overnight to soften.
  2. Warm 50 ml of milk and dissolve saffron strands.
  3. Dice fresh fruits into small cubes and puree strawberries.
  4. Hang Greek yogurt in a strainer for 1 hour to remove excess water.
  5. Mix sugar substitute, saffron-infused milk, and cardamom powder into the hung yogurt.
  6. Whip the yogurt until smooth and aromatic.
  7. Drain chia seeds and keep them aside.
  8. In a parfait or sundae glass, layer the dessert: start with strawberry puree at the bottom.
  9. Add a layer of prepared shrikhand, followed by chia seeds and fresh fruits.
  10. Repeat layering two more times.
  11. Garnish the top with remaining chia seeds, fresh fruits, and a drizzle of strawberry puree.
  12. Serve chilled and enjoy a creamy, fruity, and nutritious dessert.
