Quick and Easy Warm Cucumber Lemon Salad Recipe

Enjoy a refreshing and nutritious Warm Cucumber Lemon Salad, perfect as a healthy side or light meal. This simple salad combines fresh cucumber, aromatic herbs, and zesty lemon for a burst of flavor in just 15 minutes.

Ingredients (Serves 2)

  • 1 cucumber, thinly sliced with peel
  • 1/2 tsp olive oil
  • 1/2 tsp fresh mint and coriander, chopped
  • Salt to taste
  • 1/2 tsp black pepper powder
  • 1 tsp lemon juice
  • Chilli flakes, optional

Method

  1. Heat olive oil in a pan over high heat.
  2. Add cucumber slices and sauté for 2–3 minutes, tossing evenly.
  3. Stir in fresh mint and coriander, tossing for another minute.
  4. Season with salt and black pepper, mix well, and transfer to a serving plate.
  5. Drizzle with lemon juice and give a final toss.
  6. Optionally, sprinkle with chilli flakes for a spicy kick. Serve immediately.
