Ingredients
- 2 large karelas (bitter gourd)
- 1/2 cup low-fat paneer, grated
- 1 onion, finely chopped
- 2 green chillies, chopped
- 1-inch ginger, grated
- 4 garlic cloves, minced
- 1/2 cup coriander leaves, chopped
- 1 cup besan (gram flour)
- 1 tsp amchur powder or chaat masala
- 1 tsp red chilli powder
- 1/2 tsp turmeric powder
- 1/2 tsp ajwain seeds
- Salt to taste
- Oil for pan-frying
Method
- Wash the karela thoroughly and grate it. Transfer the grated karela to a mixer-grinder and pulse into a coarse mixture. Add 1 tsp salt and set aside for 30 minutes.
- Finely chop onions, green chillies, ginger, garlic, and coriander leaves. Keep ready in a large mixing bowl.
- Squeeze out excess water from the karela mixture and add it to the bowl.
- Mix in paneer, spices, ajwain seeds, and besan. Adjust salt to taste and combine thoroughly.
- Break off small portions of the mixture and flatten into round tikkis.
- Pan-fry on medium heat until golden brown on both sides. Serve hot with green chutney or yogurt dip.
