Authentic Ariselu Sweet Recipe: How to Make Telangana’s Festive Delight at Home

Ariselu is a cherished traditional sweet from the South Indian regions of Telangana and Andhra Pradesh, also known as Kajjaaya in Kannada, Anarsa in Marathi, and Adhirasam in Tamil Nadu. Commonly prepared during Sankranti and Diwali, this festive delicacy is known for its rich taste and cultural significance. Ariselu is typically made using rice flour, jaggery, sesame seeds, and ghee, and is celebrated for its ability to provide warmth and nourishment during colder seasons.

Ingredients:

  • 1/2 cup rice
  • 1/2 cup jaggery
  • 1 cup water
  • 1 tsp cardamom powder
  • 1 tbsp ghee
  • Oil for deep frying
  • Sesame seeds for garnishing

Method:

1. Soaking and Grinding Rice:
Start by soaking the rice overnight. Rinse 2–3 times and drain. Let it sit on a strainer for about 10–15 minutes. Once slightly dried, grind the rice into a very fine flour using a blender or grinder and keep aside.

2. Preparing Jaggery Syrup:
Add jaggery and about 40–50 ml of water to a deep pan. Heat until the jaggery melts and starts to boil. Once it bubbles, drop a bit into water to check consistency—it should form a soft ball without dissolving. Once ready, add cardamom powder and ghee. Turn off the flame and set aside.

3. Making the Dough:
Gradually sieve the prepared rice flour into the jaggery syrup while stirring. Keep adding flour until a dough-like consistency is achieved—similar to chapati dough.

4. Shaping Ariselu:
Heat oil on medium flame for frying. Grease a plastic sheet placed over a flat lid and your fingers with ghee. Take a small portion of dough, roll into a ball, flatten it into a disc. If desired, dip the dough in sesame seeds before flattening for an added traditional touch.

5. Frying:
Carefully place the prepared disc into hot oil. Once it rises, flip and fry both sides until golden brown. Remove from oil and press between two spoons to squeeze out excess oil.

6. Serving:
Garnish each Ariselu with sesame seeds and a few drops of ghee. Serve warm for an authentic taste of South Indian festive flavor.
