These oval or round-shaped kebabs are softer and more succulent compared to seekh kebabs and are often prepared during festive occasions like Eid celebrations. Ingredients for Mutton Gola Kebabs

  • 750 gms minced mutton
  • 70 g mutton fat or 2 tbsp butter
  • 1.5 tbsp ginger paste
  • 1.5 tbsp garlic paste
  • 1 tbsp raw papaya paste
  • 1.5 tsp salt
  • 1 tsp red chilli powder
  • 1 tsp chaat masala
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1 tsp cumin powder
  • 0.5 tsp turmeric powder
  • 2 tbsp roasted gram flour
  • 1 tbsp cornflour
  • 2 medium golden fried onions
  • Fresh coriander leaves
  • Mint leaves
  • 4–5 green chillies
  • Juice of 1 lemon
  • Charcoal piece for smoking
  • Oil for frying
  • Onion rings and fried green chillies for garnish

Step-by-Step Method

  1. In a grinder add minced mutton mutton fat or butter ginger paste garlic paste raw papaya paste powdered spices fried onions roasted gram flour cornflour coriander leaves mint leaves green chillies and lemon juice. Blend until smooth.
  2. Transfer the mixture into a bowl. Place hot charcoal on foil in the center drizzle a few drops of oil to create smoke and cover with a lid for 15 minutes. This will infuse the kebabs with a rich smoky flavor.
  3. Shape the kebabs by making small balls insert a skewer and then give them an oval shape before gently removing the skewer.
  4. Heat oil in a pan and fry the kebabs until golden brown on all sides.
  5. Garnish with onion rings fried green chillies and lemon wedges before serving.

These kebabs are best enjoyed with mint chutney or raita making them an ideal starter for dinner parties festive meals and family gatherings.
