Ingredients (Serves 4)
For the Dal
1 cup toor dal
3 cups water
¼ teaspoon turmeric
Salt to taste
For the Sambar Base
1 cup mixed vegetables such as drumstick pumpkin carrot beans
1 chopped tomato
1 small lemon-sized tamarind soaked in warm water
2 tablespoons sambar powder
½ teaspoon turmeric
Salt to taste
For Tempering
2 teaspoons oil or ghee
1 teaspoon mustard seeds
½ teaspoon cumin seeds
2 dried red chillies
1 sprig curry leaves
A pinch of hing
Method
Wash the toor dal and pressure cook it with turmeric and water until soft then mash and keep aside.
Cook the vegetables with turmeric and water until tender.
Add chopped tomato and sambar powder then simmer briefly.
Extract tamarind pulp add it to the pot and boil gently.
Stir in the cooked dal adjust salt and simmer until flavours blend.
Prepare tempering by heating oil adding mustard cumin red chillies curry leaves and hing.
Pour tempering over the sambar and serve hot.
