Chef Ranveer Brar Reveals Expert Tips to Make Soft and Fluffy Dahi Bhallas Without Lumps

If you’ve ever struggled to make your dahi bhallas light and lump-free, celebrity chef Ranveer Brar has just the solution. In a recent Instagram video shared on July 26, the chef broke down his personal method for achieving perfectly soft and airy bhallas — and the secret lies in managing the oil and water temperatures just right.

Chef Ranveer emphasized the importance of technique while preparing the bhalla batter. One of his first tricks is to wet your hands before shaping the bhallas for frying. This helps in smooth handling and ensures that no air escapes from the batter. “Scoop the batter gently from one side to lock the air inside,” he explained. This ensures the bhallas puff up when fried, giving them that desirable airy texture.

As for frying, Ranveer advises starting at a very low flame. Once the bhalla is in the oil, you can gradually increase the flame. The reason? When you drop the bhallas into the hot oil, the temperature decreases slightly, so raising the flame ensures they cook evenly without turning hard.

Another pro tip shared by the chef is about how to soak fried bhallas without causing unwanted lumps. According to him, cold water is the key. When you immediately add hot bhallas into warm water, the resulting temperature may encourage lump formation inside the bhallas. To avoid this, either let the bhallas rest a bit and then transfer them into cold water, or ensure the soaking water is cold right from the start.

Chef Ranveer also suggests lowering the bhallas slowly into the water instead of dropping them quickly. “The goal is to ensure the bhallas soak evenly without forming lumps inside. When you cut them, the texture should be consistent throughout,” he noted.

These expert tips not only help in perfecting the texture but also enhance the taste of the dish, making it ideal for festive meals or special occasions. Mastering the method of soaking and frying bhallas is crucial if you want to serve the perfect dahi bhalla platter at home.
