Crispy Dahi Bread Rolls Recipe: How to Make North Indian Dahi Ke Sholay at Home

Try this homemade Dahi Bread Rolls recipe, also known as Dahi ke Sholay, a North Indian favourite loved for its crispy texture outside and creamy flavourful filling inside. Perfect to enjoy with a cup of hot chai or to serve to guests when you want to impress with minimal effort.

To prepare these crunchy rolls, start by mixing hung curd with finely chopped onions, carrots, and bell peppers in a bowl. Season the mixture with red chilli powder, pepper powder, garam masala, and a pinch of salt. Next, trim the edges of fresh bread slices and flatten them evenly using a rolling pin. Make a simple sealing slurry by mixing maida with water.

Place a spoonful of the curd filling on one corner of the bread slice, brush the edges with the slurry, and gently roll it up into an oval shape ensuring all edges are sealed properly. Repeat with the remaining bread slices. Heat oil in a kadhai on medium heat and deep fry the rolls until they are golden brown and perfectly crisp.
