For Strawberry Jelly:
- 1000 grams strawberry puree
- 200 grams sugar
- 10 grams agar agar
For Mango Bavaroise:
- 400 ml mango pulp
- 21 grams gelatin
- 100 ml milk
- 40 grams milk powder
- 675 grams whipped cream
For Sable:
- 800 grams flour
- 175 grams sugar
- 40 grams baking powder
- 500 grams butter
- 625 grams fresh cream
- 4 grams salt
Method:
- Prepare the Strawberry Jelly:
In a pan, heat the strawberry puree gently. Stir in the sugar and agar agar until fully dissolved. Pour the mixture into dome-shaped moulds and allow it to cool and set completely. - Make the Mango Bavaroise:
Combine mango pulp, milk, milk powder, and gelatin until smooth. Fold this mixture into the whipped cream gently to maintain its light texture. Pour a portion of the mango bavaroise into a dome mould, place the set strawberry jelly in the centre, and cover with more bavaroise. Let it chill until firm. - Bake the Sable Base:
Knead the flour, sugar, baking powder, butter, cream, and salt into a smooth dough. Roll it out evenly, cut into rounds to match the dome size, and bake until golden. Let the sable cool completely. - Assemble the Dessert:
Once the domes are fully set, carefully unmould each mango dome and place it on top of a sable biscuit base. Serve chilled and enjoy this eye-catching, melt-in-the-mouth delight.
