Method

  2. Sift together almond flour, icing sugar, and matcha powder until well combined.
  3. Whip egg whites on medium speed until frothy, then gradually add fine sugar. Continue whisking until stiff peaks form.
  4. Transfer the meringue to a large mixing bowl.
  5. Gently fold in one-quarter of the almond mixture, then gradually fold in the rest until the batter reaches a smooth, lava-like consistency.
  6. Fill a piping bag with the batter and pipe 2-inch circles, spacing them about 1 inch apart.
  7. Let the piped macarons rest at room temperature for 25–40 minutes until the tops form a smooth skin.
  8. Preheat the oven to 160°C and bake for 6 minutes, rotate the tray, and bake another 6 minutes. Bake one tray at a time.
