Delightful Matcha Green Tea Macarons with White Chocolate Ganache Recipe

Matcha green tea macarons are an elegant fusion of French patisserie and Japanese tea culture. Ingredients

For the macaron shells:

  • 5 egg whites
  • 20 g fine sugar
  • 368 g icing sugar
  • 425 g almond flour
  • 1 tbsp matcha green tea powder

For the white chocolate ganache:

  • 60 ml heavy cream
  • 170 g white chocolate, chopped

Method

Step 1 – Prepare the shells:

  1. Line two baking trays with silicone mats.
  2. Sift together almond flour, icing sugar, and matcha powder until well combined.
  3. Whip egg whites on medium speed until frothy, then gradually add fine sugar. Continue whisking until stiff peaks form.
  4. Transfer the meringue to a large mixing bowl.
  5. Gently fold in one-quarter of the almond mixture, then gradually fold in the rest until the batter reaches a smooth, lava-like consistency.
  6. Fill a piping bag with the batter and pipe 2-inch circles, spacing them about 1 inch apart.
  7. Let the piped macarons rest at room temperature for 25–40 minutes until the tops form a smooth skin.
  8. Preheat the oven to 160°C and bake for 6 minutes, rotate the tray, and bake another 6 minutes. Bake one tray at a time.
  9. Slide the silicone mat onto a cooling rack and let the shells cool completely.

Step 2 – Prepare the ganache:

  1. Heat the cream until it just begins to boil, then pour over chopped white chocolate. Stir with a wooden spatula until smooth.
  2. Allow the ganache to cool and thicken at room temperature.
  3. Once set, transfer to a piping bag and pipe a small amount onto one macaron shell, sandwiching it with another.
  4. Press lightly so the ganache spreads evenly to the edges.
