A senior gastroenterologist from Fortis Hospital Vasant Kunj has advised people to think twice before consuming certain vegetables in their raw form. Dr Shubham Vatsya recently shared a health advisory explaining that spinach cabbage and eggplant should ideally be cooked before consumption to reduce potential health complications.
While raw food diets continue to gain popularity the doctor emphasised that not all vegetables are safest when eaten uncooked. According to him some may carry harmful bacteria parasites or naturally occurring compounds that can trigger digestive distress or more serious conditions if not properly prepared.
Spinach and the risk of infection and kidney stones
Spinach is often considered a superfood and a common salad ingredient. However raw spinach may contain harmful bacteria such as E coli along with parasitic contaminants that are not always eliminated through rinsing alone. The doctor also highlighted that spinach is high in oxalates which when consumed in excess without cooking may increase the likelihood of developing kidney stones in susceptible individuals. Cooking helps reduce oxalate levels and improves digestibility.
Cabbage and possible parasitic contamination
Raw cabbage can potentially harbour tapeworm eggs on its surface. If ingested and absorbed into the bloodstream these parasites may travel to other parts of the body including the brain leading to a serious condition known as neurocysticercosis. Proper washing followed by adequate cooking significantly lowers this risk by destroying harmful organisms that survive basic cleaning.
Eggplant and natural toxins
Eggplant also known as brinjal contains solanine a naturally occurring compound found in certain members of the nightshade family. When eaten raw solanine may cause nausea vomiting stomach discomfort and general digestive upset. Applying heat through cooking helps neutralise these compounds making the vegetable safer and easier to digest.
The importance of proper preparation
The specialist stressed that simple cooking methods such as steaming boiling or sautéing can eliminate bacteria reduce toxin levels and improve nutrient absorption. He noted that healthy eating is not only about choosing the right ingredients but also about preparing them correctly.
