Step-by-Step Method to Make Achaari Paneer Kathi Roll
Step 1: Marinate the paneer
Cut paneer into cubes and coat with ginger-garlic paste, lemon juice, and salt. Keep aside for 30–60 minutes.
Step 2: Prepare the spice mix
Dry roast fennel seeds, nigella seeds, cumin seeds, and mustard seeds until aromatic. Grind into a fine powder. Mix this powder with achaari masala, garam masala, chilli powder, turmeric, mustard oil, and hung curd to form a thick paste.

Add the marinated paneer cubes to the spice-yogurt paste. Let it rest for another 30 minutes. Roast in an oven or tawa for 7–8 minutes until golden.
Step 4: Assemble the roll
Heat a paratha on a tawa. Spread mint chutney on it, place the roasted achaari paneer in the center, and top with sliced onions and a squeeze of lemon juice.
