Ingredients:

  • Dried morels – 60g
  • Butter – 50g
  • Onion – ½
  • Garlic – 2 cloves
  • White wine – 1 cup
  • Heavy cream – 200g
  • Parsley – 1 tsp
  • Tarragon – 1 tsp
  • Chives – 1 tsp
  • Parmesan cheese – 80g
  • Tagliatelle – 400g
  • Salt and pepper to taste

Method:
Soak the dried morels in hot water for about 20 minutes then strain and keep the mushroom stock for later. In a hot pan sauté finely chopped onion garlic and rehydrated morels in butter until fragrant. Deglaze with white wine and allow it to reduce. Pour in equal parts of the reserved mushroom stock and heavy cream. Simmer gently to allow the flavors to combine. Meanwhile boil the tagliatelle in salted water until al dente then transfer it into the mushroom sauce. Turn off the heat add grated parmesan and mix thoroughly. Adjust with a splash of pasta water if needed. Season with salt and pepper and finish with freshly chopped tarragon parsley and chives for a fine herb touch.
