Kinara by Vikas Khanna will present Forgotten Flavours Volume II The Royal Kitchens of India on Saturday February 28 offering guests a rare opportunity to taste dishes once reserved for Indian royalty.
The specially curated six course tasting menu revisits recipes from historic dynasties across India drawing inspiration from regions ranging from Kashmir to Odisha. Known for reviving age old culinary traditions Chef Vikas Khanna brings nearly lost techniques back to life highlighting the elegance patience and artistry of royal Indian kitchens.
The evening begins with Rathore’s 100 layer potatoes paired with ker sangri pickle and a grape pairing inspired by Rajasthani court cuisine. Guests will then enjoy a Kashmiri lotus root tikki filled with apricot followed by the legendary Awadhi galouti kebab finished with 23 karat gold available in both lamb and mushroom options.
As the journey continues the menu travels south with a stuffed roasted pumpkin dish inspired by Mysore flavours enhanced with jaggery and cashew dust. The main course features a Royal Bengal chicken or paneer roulade served in a rich saffron nut gravy. Each course is thoughtfully paired with selected wines from Sula to elevate the dining experience.
