Ingredients
- 1 kg red jalapeno peppers
- ½ kg red serrano peppers
- ½ cup water
- 4–6 garlic cloves
- 3 tbsp light brown sugar
- 1 tbsp kosher salt
- ½ cup distilled white vinegar
Instructions
Step 1: Add the jalapeno and serrano peppers along with garlic brown sugar salt and water into a blender. Blend the mixture 3–4 times until smooth.
Step 2: Transfer the blended puree to a large glass jar and cover it with plastic wrap. Store the jar in a cool dark place for 4 to 5 days for natural fermentation.
Step 3: Stir the mixture once every day to help the fermentation process. Always re-cover the jar after stirring.
Step 4: After 4–5 days you’ll notice bubbles indicating that the mixture has started fermenting.
Step 5: Blend the fermented mixture again and add the vinegar. After blending strain it using a fine mesh strainer to remove pulp.
Step 6: Pour the strained liquid into a saucepan and boil over medium heat for 10–15 minutes stirring constantly until it thickens slightly.
Step 7: Allow the sauce to cool completely. Once cooled transfer it into a sterilized airtight bottle or jar and refrigerate.
