As more people shift towards healthier lifestyles, nutrient-rich ingredients like millets, plant-based proteins, and seasonal vegetables are becoming essential in everyday meals. These superfoods not only offer numerous health benefits but can also be transformed into flavourful dishes that satisfy your taste buds.

To help upgrade your diet without compromising on taste, celebrity chef Gautam Kumar shares four wholesome millet-based recipes. From a comforting soup to indulgent desserts, these dishes strike the perfect balance between nutrition and flavour.

1. Millet Lentil Soup with Raw Mango and Crispy Garlic

This hearty soup combines multiple lentils with millet flours to create a protein-packed meal. The addition of raw mango adds a subtle tang, while golden fried garlic enhances the flavour.

Start by washing and pressure cooking a mix of lentils with diced raw mango, turmeric, salt, and water until soft. Meanwhile, lightly roast sorghum and ragi millet flours until aromatic.

Prepare a tempering using ghee, garlic, cumin seeds, red chilli, and a pinch of asafoetida. Combine the cooked lentils with the roasted millet flour and tempering, then simmer for a few minutes. Finish with fresh coriander and crispy garlic on top before serving hot.

2. Proso Millet and Vegetable Seekh Kebab

A healthy twist on traditional kebabs, this dish uses proso millet along with fresh vegetables for a fibre-rich and satisfying snack.

Cook soaked millet until tender and dry it slightly in ghee to remove excess moisture. Sauté finely chopped vegetables like carrots, beans, cauliflower, and peas until soft.

Mix the millet with vegetables, grated potato, paneer, spices, and binding agents like gram flour and breadcrumbs. Shape the mixture onto skewers and grill until golden, basting with butter for extra flavour. Serve hot with chutney for a delicious and healthy appetiser.

3. Saffron Amaranth Phirni

This creamy dessert offers a nutritious alternative to traditional sweets by using amaranth flour.

Begin by roasting the flour in ghee until lightly golden. Simmer milk and gradually whisk in the roasted flour along with cardamom powder. Cook until thick and smooth, then add sugar and a saffron infusion for richness and aroma.

Allow the phirni to cool, then chill before serving. Garnish with saffron strands for a delightful finish.

4. Saffron Samak Kulfi

A refreshing frozen dessert made with barnyard millet, this kulfi is both unique and wholesome.

Soak and grind the millet into a smooth paste. Reduce milk by simmering, then add the millet paste and cook until thick. Mix in sugar, cardamom, saffron, and chopped nuts.

Once cooled, pour into moulds and freeze until set. The result is a creamy and flavourful kulfi with a healthy twist.

These recipes highlight how millets can be creatively used in everyday cooking, making meals both nourishing and enjoyable. Whether you are looking for a light soup, a filling snack, or a dessert, these dishes are perfect for adding variety and health to your diet.
