French toast is widely loved as a comforting breakfast classic, usually prepared with eggs, milk, and sweet toppings. While it tastes indulgent, it often doesn’t fit into a clean eating routine. Giving this dish a nutritious twist, fitness influencer Vanshika Khurana has introduced a savoury vegetarian version that is both healthy and protein-rich.
Her recipe caters to Indian taste preferences by incorporating everyday spices and ingredients while eliminating added sugar and excess fat. Instead of butter, minimal oil is used, and the dish is designed to support fitness goals. According to her, one serving delivers around 35 grams of protein and approximately 465 calories, making it a balanced and filling meal option.
This upgraded version of French toast uses ingredients like besan, Greek yoghurt, paneer, and protein-rich bread to enhance nutritional value. The addition of vegetables and spices not only boosts flavour but also increases overall health benefits.
To prepare the batter, combine besan, Greek yoghurt, finely chopped onion and spinach, turmeric powder, chilli flakes, mixed herbs, salt, pepper, and a little water to achieve a thick consistency. Once ready, dip slices of bread into the batter, ensuring they are well coated.
Heat a pan and lightly grease it with oil spray. Cook the coated bread slices on both sides until they turn golden and crisp. After that, add crumbled paneer on top of the toast and let it cook slightly. Sprinkle grated cheese over it and cover the pan for a couple of minutes to allow the cheese to melt properly.
For the final touch, drizzle some Schezwan chutney on top, cut into pieces, and serve hot. The result is a delicious, spicy, and protein-packed breakfast that is perfect for those aiming to maintain a healthy diet without compromising on taste.
