Ingredients for Nachani Shankarpali

  • 450 ml milk
  • 300 g ghee (vanaspati ghee or clarified butter)
  • 300 g powdered sugar
  • 1 kg nachani flour (finger millet flour)
  • Oil for frying

Method: How to Make Nachani Shankarpali

  1. Heat ghee in a pan. In a mixing plate, add nachani flour and sugar. Pour the hot ghee into the mixture.
  2. Knead the dough using milk until smooth.
  3. Allow the dough to rest for one hour.
  4. Roll the dough into a round shape and cut into small diamond or square pieces (shankarpali shape).
  5. Heat oil in a kadai. Fry the shankarpali on medium heat until golden and crispy. Ensure the oil is not overheated.
  6. Remove from the kadai and place on tissue paper to absorb excess oil.
  7. Once cooled, store the nachani shankarpali in an airtight container and enjoy during tea time or festive gatherings.
