The vibrant festival of Bohag Bihu brings with it not just music and celebration but also simple seasonal foods that suit the rising summer heat. Among the most cherished dishes is Poita Bhat, a traditional breakfast known for its cooling, hydrating, and light qualities.
Deeply rooted in rural Assamese life, Poita Bhat was commonly eaten by farmers before heading to the fields. Made using leftover rice soaked overnight in water, the dish naturally ferments, making it refreshing and easy to digest. This fermentation process may also introduce beneficial probiotics, supporting gut health during hot weather.
During Bohag Bihu, the dish is often paired with simple sides like roasted fish, green chillies, chopped onion, curd, or bamboo shoot pickle. The meal reflects the essence of Assamese cuisine—minimal, seasonal, and nourishing.
The base ingredients are straightforward—rice and water—but the magic lies in the overnight soaking. The result is a mildly tangy, soft-textured dish that feels cooling when consumed. Additions like mustard oil, onion, and green chilli enhance both flavour and nutritional value, making it ideal for warm mornings.
Ingredients
1 cup cooked rice
2 cups water
1 small onion finely chopped
1 green chilli finely chopped
1 teaspoon mustard oil
Half teaspoon salt
1 tablespoon coriander leaves chopped
1 lemon wedge for serving
Method
Place cooked rice in a bowl or earthen pot and pour water over it until fully submerged. Cover and leave it overnight at room temperature for around 8 to 10 hours to allow natural fermentation. In the morning, drain excess water if needed and lightly mash the rice. Add chopped onion, green chilli, coriander leaves, mustard oil, and salt. Mix gently and serve fresh with a lemon wedge or side dishes like pickle mashed potato or roasted fish.
Nutritionally, Poita Bhat provides a good source of carbohydrates for energy while fermentation may support digestion through natural probiotics. Ingredients like onion and green chilli contribute fibre and vitamin C, while mustard oil adds healthy fats and a distinctive aroma.
