Spicy Peri Peri Chicken Rolls Recipe – Easy Homemade Delight

Discover the perfect way to enjoy a spicy and flavorful meal with this Peri Peri Chicken Rolls recipe. These rolls combine tender, marinated chicken with crisp parathas and fresh vegetables, making them ideal for lunch, dinner, or a fun snack for kids and adults alike.

Ingredients for Peri Peri Chicken:

  • 500 grams boneless chicken cubes
  • Salt to taste
  • 1 tsp garlic powder
  • 1 tsp paprika powder
  • 1 tsp black pepper powder
  • 2 tbsp oil or ghee or butter
  • 1 tsp vinegar
  • 1 tsp soya sauce
  • 3 tbsp peri peri sauce
  • Peri peri seasoning (optional for extra spice)

Ingredients for Parathas:

  • 1 ½ tsp maida (all-purpose flour)
  • Water as required
  • Pinch of salt

Ingredients for Assembly:

  • 2 tomatoes, thinly sliced
  • 1 onion, thinly sliced
  • 1 capsicum, sliced
  • ½ cup boiled sweet corn
  • Lettuce leaves
  • Mayonnaise
  • Ketchup

Method to Make Peri Peri Chicken Rolls:

  1. In a bowl, mix maida with a pinch of salt and gradually add water to knead it into a smooth dough. Let it rest for 30 minutes.
  2. In another bowl, marinate the chicken cubes with salt, garlic powder, paprika powder, black pepper, oil, vinegar, soya sauce, and peri peri sauce. Leave aside for 30 minutes for the flavors to infuse.
  3. Divide the dough into small balls and roll them into thin parathas. Cook them on a hot pan until crisp and golden.
  4. Cook the marinated chicken in a pan until tender and fully seasoned. Add extra peri peri seasoning if a spicier taste is desired. Let the chicken cool slightly.
  5. To assemble, spread mayonnaise and ketchup over the cooked parathas. Layer with lettuce, tomatoes, onions, capsicum, sweet corn, and then the cooked chicken. Roll tightly and secure with a toothpick. Serve immediately.
