Traditional Maharashtrian Delight: How to Make Sweet and Spicy Red Pumpkin Raita (Lal Bhoplyacha Bharit) at Home

If you’re craving a comforting and flavorful addition to your traditional Maharashtrian thali, look no further than this delightful Red Pumpkin Raita, locally known as Lal Bhoplyacha Bharit. This easy-to-make side dish is a blend of natural sweetness from red pumpkin, creamy yogurt, and aromatic tempering that makes it both nourishing and delicious.

The recipe is incredibly simple, requiring only 20 minutes in total. Begin by cutting 200 grams of red pumpkin into cubes. Boil the pumpkin until soft, then allow it to cool before mashing it to a smooth consistency. In a bowl, whisk 1 cup of thick yogurt until creamy. Mix in the mashed pumpkin along with 1 to 2 finely chopped green chillies, a pinch of salt, and ½ teaspoon of sugar. Stir the mixture well.

To prepare the flavorful tempering, heat ½ teaspoon of desi ghee in a small pan, then add ½ teaspoon of mustard seeds, 5 to 6 curry leaves, and a pinch of asafoetida (hing). Once they splutter and release their aroma, pour the tempering over the raita. For added crunch and nutty flavor, sprinkle in 1 tablespoon of roasted groundnuts and mix again.

Chill the raita before serving. This dish pairs beautifully with chapatis, steamed rice, or as a cooling side to spicy curries.
