Ingredients You’ll Need (Serves 6):

  • 250 grams garlic (peeled)
  • 250 grams khoya (mawa)
  • 200 grams desi ghee (clarified butter)
  • 2 litres full cream milk
  • 180 grams sugar
  • 12 to 15 saffron strands (optional)
  • 150 grams chopped almonds pistachios cashews
  • 2 teaspoons cardamom powder
  • 2 teaspoons alum powder or white vinegar

Step-by-Step Cooking Instructions:

Pre-Preparation:

  1. Boil water in a deep pan and add peeled garlic cloves along with half a teaspoon of alum powder. Boil for 4–5 minutes.
  2. Drain and rinse the garlic and the pan thoroughly. Repeat this boiling and rinsing process 6–8 times to mellow the strong garlic aroma.
  3. Once done, cool the garlic slightly and grind it into a smooth paste using some milk for consistency.

Preparation:

  1. In a heavy-bottomed kadhai, heat ghee on a low flame. Add the garlic paste and cook while stirring until it turns golden brown and aromatic.
  2. Slowly pour in the milk and keep stirring to avoid lumps, allowing the mixture to thicken gradually.
  3. Once thickened, add khoya and continue cooking till the mixture takes on a rich dark color.
  4. Mix in sugar and cook for another 6–8 minutes until the ghee separates and the mixture leaves the sides of the pan.
  5. Sprinkle in cardamom powder and garnish with saffron and dry fruits.
  6. Serve hot and enjoy the deep, nutty, and slightly pungent dessert with royal Rajasthani flair.
