Tacos may have long carried an unfair reputation as indulgent comfort food but a UK based surgeon says it is time to rethink everything you know about Mexican cuisine. According to Dr Karan Rajan traditional Mexican meals are scientifically balanced and nutritionally powerful making tacos something you can enjoy without guilt. Using everyday ingredients like beans rice salsa avocado and corn tortillas Mexican food delivers an impressive mix of fibre protein healthy fats and complex carbohydrates that support gut health and overall wellbeing.
In a recent social media video Dr Rajan described Mexican cuisine as a “masterpiece of nutritional engineering” explaining how each component works together to fuel the body efficiently. Rather than relying on ultra processed elements traditional Mexican meals are rooted in whole foods that have been combined intelligently for thousands of years.
Dr Rajan explains that beans and rice form the backbone of this balance. While plant proteins are often considered incomplete beans and rice naturally complement each other by providing all essential amino acids when eaten together. This pairing results in a complete high quality protein that supports muscle repair energy levels and satiety without excessive saturated fat.
Fibre plays an equally important role. Pinto beans provide a significant fibre boost while corn tortillas contribute resistant starch and cellulose. Fresh salsa made with tomatoes onions and peppers adds prebiotic fibres and antioxidants while avocado supplies both fibre and heart healthy fats. Together these elements act as nourishment for beneficial gut bacteria improving digestion and supporting metabolic health.
Healthy fats from avocado also help the body absorb fat soluble vitamins found in vegetables including vitamins A D E and K. Meanwhile slow fermenting fibres in corn promote the production of short chain fatty acids like butyrate which strengthens the gut lining and helps reduce inflammation. Beans also contain polyphenols that feed beneficial bacteria linked to improved blood sugar control and metabolic function.
Dr Rajan emphasises that Mexican food should not be dismissed as junk or fast food. Instead it represents centuries of culinary wisdom rooted in nutritional science long before the science existed. When prepared traditionally tacos are balanced filling and deeply nourishing making them a smart and satisfying choice rather than a guilty pleasure.
