Warm Up This Monsoon with a Hearty Bowl of Traditional Moroccan Harira Soup

When the monsoon rains roll in and bring along a chill in the air, there’s nothing quite like a hot, comforting bowl of soup to soothe the soul. One dish that perfectly fits the bill is Morocco’s traditional Harira soup—a delicious, protein-rich and spice-filled recipe that’s as nourishing as it is flavorful.

This vibrant soup offers the exotic essence of Moroccan cuisine, making it a go-to for days when you crave something warm and aromatic. The Harira is packed with chickpeas, red lentils, fresh herbs, and a bold medley of spices, providing a balance of nutrition and taste in every spoonful.

Ingredients for the Tomato Slurry:

  • Diced tomatoes – 1.75 cups
  • Diced white onion – ½ (large)

For the Soup:

  • Ghee or olive oil – 2 tablespoons
  • Tomato-onion slurry (prepared above)
  • Boiled chickpeas – 1.75 cups
  • Chopped cilantro – 2 tablespoons
  • Chopped parsley – 2 tablespoons
  • Water – 2 cups
  • Sea salt – ½ tablespoon
  • Ground pepper – 1 teaspoon
  • Cinnamon – ½ teaspoon
  • Ground ginger – 1 teaspoon
  • Turmeric powder – ¼ teaspoon
  • Saffron – ½ teaspoon
  • Dry red lentils – 1 cup
  • Tomato paste – 2 tablespoons (mixed with 2.5 cups water)
  • Flour slurry – ½ cup flour mixed with 1 cup water

Preparation Method:
Begin by blending the diced tomatoes and onion in a food processor until completely smooth and set aside. In a deep pot, heat the ghee or olive oil over medium flame and gently toast all the spices for about 30 seconds to release their aromas. Add the tomato-onion puree, chickpeas, red lentils, chopped herbs, and 2 cups of water. Let it simmer with the lid on for approximately 20 minutes, stirring every 5 minutes to prevent sticking, until the lentils are tender. Add the tomato paste mixture and saffron, continuing to simmer for another 5 minutes. Stir in the flour slurry to thicken the soup. Adjust consistency with small amounts of water if needed. Serve hot with harissa sauce, lemon juice, and black pepper on top.

To make it a fuller meal, you can pair this dish with steamed rice, vermicelli, or even boiled pasta. For extra protein, ground meat can be incorporated while maintaining the traditional roots of this comforting dish.
