Broccoli Spinach Soup Recipe
Ingredients (Serves 3–4)
2 cups broccoli florets
1 cup spinach leaves
1 medium onion chopped
3 to 4 garlic cloves minced
1 tablespoon olive oil or butter
2 cups vegetable broth or water
½ cup low fat milk or coconut milk
½ teaspoon black pepper
Salt to taste
1 teaspoon lemon juice
Method
Heat oil or butter in a pot and sauté onions until soft.
Add garlic and cook briefly until fragrant.
Add broccoli florets and sauté for two minutes.
Pour in broth or water and bring to a gentle simmer.
Add spinach leaves and cook until wilted.
Blend the mixture until smooth or slightly chunky as preferred.
Return to the pot add milk pepper and salt then simmer for two to three minutes.
