Ingredients

For the Sandwich Filling:

  • 1/2 each red green and yellow bell peppers
  • 1 onion sliced
  • 40 grams leek
  • 1 small eggplant sliced
  • 50 grams yellow squash sliced
  • 50 grams zucchini sliced
  • 50 grams broccoli florets
  • A handful of lettuce leaves
  • Salt and pepper as needed
  • 2–3 tablespoons olive oil
  • 3–4 slices Brie cheese

For the Marinade:

  • 1 tablespoon balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon chili flakes
  • 2 basil leaves
  • 1 sage leaf
  • 1 small bunch rosemary chopped

For the Creamy Plum Spread:

  • 3 tablespoons cream cheese
  • 2 tablespoons plum chutney
  • A few drops Tabasco sauce
  • Salt and pepper as needed

Method

Prepare the broccoli by cutting it into small florets.

  1. Grill bell peppers, zucchini, squash, eggplant, and onion slices on both sides, brushing with olive oil and fresh herbs as they cook.
  2. Toss the grilled vegetables in the marinade mixture and let them rest for about 10 minutes to absorb all the flavors.
  3. Lightly toast or grill your bread slices or burger buns.
  4. In a bowl, combine cream cheese, plum chutney, Tabasco sauce, salt, and pepper to create a smooth spread.
  5. Generously spread the plum cheese mixture over the toasted bread slices.
  6. Layer fresh lettuce leaves on the base slice, followed by the marinated grilled vegetables.
  7. Top with slices of Brie cheese for a creamy finish.
  8. Cover with the second bread slice and serve warm with chips or salad on the side.
