Maintaining a balanced diet while enjoying comforting meals can be challenging, especially for vegetarians aiming to meet their daily protein intake. Addressing this, nutritionist and content creator Aathira Sethumadhavan has shared a wholesome and satisfying recipe that combines nutrition with taste.
Her signature protein custard and veggie rice bowl offers a perfect blend of comfort and health, delivering 22 grams of protein in just 255 calories per serving. The dish also includes balanced macronutrients with moderate carbohydrates and healthy fats, making it ideal for those focused on fitness and mindful eating.
The recipe features a savoury custard made from paneer or silken tofu blended with milk, pumpkin, ginger, garlic, and seasoning to create a smooth and creamy base. This custard is then gently steamed or baked until perfectly set, resulting in a soft and flavourful texture.
Accompanying the custard is a garlic-infused moong dal rice, prepared with soaked lentils and rice cooked together with cumin seeds, turmeric, and aromatic garlic. The combination creates a light yet filling base rich in plant-based protein.
To complete the meal, a quick stir-fry of fresh vegetables including mushrooms, spinach, cabbage, bell peppers, and zucchini is added. Lightly sautéed in olive oil and seasoned simply, the vegetables retain their crunch and nutrients while enhancing the overall dish.
Once assembled, the bowl offers a satisfying mix of textures and flavours, making it an excellent option for a healthy lunch or dinner. The recipe highlights how simple ingredients can be transformed into a nourishing meal that meets both comfort and nutritional goals.
