Curd Rice with Tempering: Light Summer Meal for Digestion Gut Health and Cooling Comfort

A bowl of chilled curd rice with a fragrant tempering is one of the simplest yet most satisfying meals during hot weather. Known for its soft texture and mild taste, this classic Indian dish is widely loved for being easy on the stomach and quick to prepare, making it an ideal comfort food in summer.

Prepared by combining cooked rice with fresh curd and a little milk or water, curd rice becomes creamy and soothing. What enhances its flavour is the addition of a light tadka made with mustard seeds, curry leaves, ginger, and green chilli. This tempering adds aroma and taste without making the dish overly spicy.

Curd is naturally rich in probiotics, which are beneficial bacteria that help support digestion and maintain gut health. When paired with rice, which provides energy, the dish becomes both nourishing and filling. Ingredients
1 cup cooked rice
1 cup curd
1/4 cup milk
1 tablespoon oil
1/2 teaspoon mustard seeds
6 to 8 curry leaves
1 small green chilli chopped
1/2 teaspoon grated ginger
1 tablespoon chopped coriander
Salt as per taste

Method
Take cooked rice in a bowl and mash it lightly while still soft. Allow it to cool completely before adding curd.
Mix curd milk and salt into the rice until it becomes smooth and creamy.
Heat oil in a small pan and add mustard seeds. Once they start to crackle add curry leaves green chilli and ginger. Cook briefly.
Pour this hot tempering over the rice mixture and combine gently.
Garnish with fresh coriander and serve chilled or at room temperature. Optional additions like grated carrot or pomegranate can enhance freshness.

In terms of nutrition, curd rice offers a balanced combination of carbohydrates protein and probiotics. It is light filling and suitable for those looking for a gentle meal that supports digestion especially during warmer months.
