Tiranga Paneer Tikka is a vibrant Indian appetizer that brings together the colors of the national flag through three distinct marinades—red white and green. This recipe features soft cubes of fresh paneer paired with bell peppers and capsicum, skewered and cooked to smoky perfection. To prepare the red marinade, blend Kashmiri chili paste with hung curd, mustard oil, chaat masala, black salt, and regular salt. For the white marinade, mix cashew paste, cream, cardamom powder, and white pepper powder until smooth. The green marinade is made with fresh mint leaves, coriander, garlic, green chilies, black salt, and regular salt, all ground into a paste.
Cut paneer into even cubes and chop bell peppers and capsicum to match their size. Divide these into three equal portions and marinate each portion in one of the three marinades for about 5–7 minutes. Thread the marinated paneer and vegetables onto skewers and cook them in a tandoor until they develop a slight char. Serve hot with mint chutney and masala lachha onions for a refreshing and tangy side.
