Authentic Rajasthani Moong Dal Paratha Recipe – Crispy and Flavorful

Rajasthani Moong Dal Paratha is a traditional Indian flatbread that stands out for its unique preparation. Unlike regular parathas, soaked moong dal is incorporated directly into the dough, giving it a crisp texture and rich flavor. This recipe is perfect for a wholesome breakfast or a fulfilling snack.

Ingredients

  • 1 cup whole wheat flour (atta)
  • 1/2 cup split yellow moong dal (dhuli dal)
  • 1 green chili, finely chopped
  • 1/2 tsp cumin seeds (jeera)
  • A pinch of asafoetida (hing)
  • 1/2 tsp turmeric powder (haldi)
  • 1/4 tsp fennel seeds
  • 1/4 tsp nigella seeds (kalonji)
  • 1/2 tsp garam masala
  • 1 tsp red chili powder
  • Fresh coriander leaves, chopped
  • Oil or ghee as needed
  • Salt to taste

Method

  1. Wash the moong dal thoroughly and soak it in water for a few hours until soft.
  2. Drain the excess water and combine the soaked dal with flour, spices, green chili, and coriander leaves in a mixing bowl.
  3. Gradually add water to form a smooth and pliable dough. Cover with a damp cloth and let it rest for 30 minutes.
  4. Apply a little ghee and knead again. Divide the dough into equal portions and roll each portion into a round flatbread.
  5. Heat a tawa or skillet on low-medium flame. Cook each paratha on both sides until golden brown, brushing with ghee while cooking. Serve hot and enjoy a crispy Rajasthani treat.
