Chef Sanjeev Kapoor has introduced a wholesome twist to the classic South Indian breakfast with his foxtail millet idli, a gluten-free, protein-rich, and fiber-packed recipe perfect for digestion, heart health, and overall wellness. Regular idlis are already a healthy choice, but incorporating foxtail millet, also known as kangni, enhances the nutritional profile, making it an ideal breakfast or snack option.
Foxtail millet is a small golden grain with a slightly nutty flavor, rich in protein, dietary fiber, and essential minerals. It helps regulate blood sugar, supports healthy digestion, promotes heart health, and aids in weight management. Naturally gluten-free, it’s suitable for people with gluten sensitivities.
Ingredients
- 1 cup foxtail millet (washed, soaked 3-4 hours, drained)
- ½ cup split skinless black gram (dhuli urad dal) (washed, soaked 3-4 hours, drained)
- 1 teaspoon fenugreek seeds (methi dana) (soaked 3-4 hours, drained)
- Salt to taste
- Oil for brushing
- Coconut chutney to serve
Method
- In a grinder, combine foxtail millet, urad dal, fenugreek seeds, and ¾ cup water. Grind into a smooth paste. Transfer to a large bowl and ferment for 6-8 hours.
- After fermentation, add salt and mix well.
- Boil water in a steamer and brush idli moulds with oil. Pour batter into each cavity. Steam for 10-12 minutes.
- Remove moulds, de-mould idlis, and serve hot with coconut chutney.
