  • 2 tbsp rice flour
  • 2 tbsp corn flour
  • 30-40 ml club soda
  • 1 tsp chili powder (Mexican or regular)
  • A few dried oregano leaves
  • 1 tsp salt
  • Extra rice and corn flour mix (for dredging)
  • Oil for deep frying

For Amla Aioli Dip:

  • 2-3 tbsp eggless mayonnaise
  • ½ roasted garlic clove (squeezed)
  • 1 tbsp finely chopped shallots
  • 3-4 pickled jalapeños
  • 2-3 fresh basil leaves
  • 1 tbsp amla pulp or paste
  • 1 ½ tsp jalapeño juice
  • Salt and pepper to taste
  • A few sprigs of fresh thyme

Step-by-Step Method

  1. Wash the sweet potato thoroughly to remove any dirt.
  2. Slice into thin strips and place them in a bowl of chilled water for 10 minutes.
  3. In a mixing bowl, prepare the batter by whisking rice flour, corn flour, chili powder, oregano, salt, and club soda until smooth.
  4. Keep aside a dry mix of rice flour, corn flour, chili powder, oregano, salt, and pepper for dredging.
  5. Drain the sweet potato slices and pat dry with a kitchen towel.
  6. Coat each slice lightly in the dry flour mix, then dip into the batter.
  7. Deep fry the slices in hot oil until golden and crispy. Remove and place on absorbent paper.
  8. For the dip, blend mayonnaise, roasted garlic, shallots, jalapeños, basil leaves, amla pulp, jalapeño juice, thyme, salt, and pepper until smooth.
  9. Chill the aioli for 20 minutes before serving.
