French Beans Sabzi Recipe with Coconut Peanut and Tamarind

French Beans Sabzi is a simple yet delicious Indian dry vegetable dish that pairs beautifully with hot chapatis or phulkas. This recipe combines the freshness of green beans with the nutty flavor of roasted peanuts, the richness of coconut, and the tang of tamarind, creating a wholesome and aromatic side dish. Ingredients for French Beans Sabzi

  • 250 gms French beans
  • 1 large onion (finely chopped)
  • 1 tomato (finely chopped)
  • 1 cup grated coconut
  • ½ cup peanuts
  • 1-inch piece of ginger
  • 4–5 garlic cloves
  • 2–3 green chilies
  • ½ tsp cumin seeds
  • ¼ tsp mustard seeds
  • ½ tsp turmeric powder
  • 1 tsp red chili powder
  • ½ cup tamarind pulp
  • 1 tbsp grated jaggery
  • Salt to taste
  • 1 tbsp oil

Method to Make French Beans Sabzi

  1. Wash, dry, and chop French beans into half-inch pieces.
  2. Dry roast peanuts and grated coconut on low flame for about 5 minutes. Let it cool, then coarsely grind.
  3. Crush garlic, ginger, and green chilies together to make a coarse paste.
  4. Heat oil in a kadhai, add mustard seeds and cumin seeds, and let them splutter.
  5. Add chopped onions and sauté until translucent.
  6. Mix in the ginger-garlic-green chili paste and cook for 2–3 minutes.
  7. Add turmeric, red chili powder, and salt. Stir well.
  8. Add French beans and tomatoes, stir-fry for 5 minutes, then cover and cook for another 5 minutes.
  9. Pour in tamarind pulp and jaggery, stir, and cook for 2 minutes.
  10. Finally, add the ground peanut-coconut mixture, mix thoroughly, and serve hot with chapatis or parathas.
