Crispy on the outside and soft on the inside, they pair perfectly with mint chutney, tamarind chutney, or fresh microgreens.
Ingredients:
- 1 1/2 tbsp Oil
- 1 cup Quinoa
- 1 cup Couscous
- 1 cup Potato (mashed)
- 1/2 cup Beetroot (grated)
- 3/4 cup Spinach (finely chopped)
- 1/2 cup Oats
- 1 tsp Ginger paste
- 1/2 tsp Garlic paste
Method:
- Mash the potatoes in a mixing bowl and add quinoa, couscous, beetroot, spinach, oats, ginger paste, and garlic paste.
- Combine all ingredients well until a uniform mixture forms.
- Scoop 1/4 cup of the mixture and shape into a round ball, then flatten gently to make a tikki. Repeat for the remaining mixture.
- Place the tikkis on a baking sheet or plate and refrigerate for 15 minutes.
- Heat oil in a frying pan over medium heat. Place tikkis in the pan without overcrowding.
- Cook each side for 8-10 minutes, then flip and cook the other side for the same time.
- Increase the flame at the end to crisp up both sides.
- Serve hot with mint chutney and tamarind chutney, garnished with fresh microgreens.
