Healthy Quinoa Couscous Beetroot Tikki Recipe – Easy Snack for Breakfast or Tea Time

These Quinoa Couscous Beetroot Tikkis are a wholesome, flavorful snack perfect for breakfast, evening tea, or get-togethers. Packed with nutritious ingredients like quinoa, couscous, beetroot, spinach, oats, and potato, these tikkis are light, healthy, and easy to prepare. Crispy on the outside and soft on the inside, they pair perfectly with mint chutney, tamarind chutney, or fresh microgreens.

Ingredients:

  • 1 1/2 tbsp Oil
  • 1 cup Quinoa
  • 1 cup Couscous
  • 1 cup Potato (mashed)
  • 1/2 cup Beetroot (grated)
  • 3/4 cup Spinach (finely chopped)
  • 1/2 cup Oats
  • 1 tsp Ginger paste
  • 1/2 tsp Garlic paste

Method:

  1. Mash the potatoes in a mixing bowl and add quinoa, couscous, beetroot, spinach, oats, ginger paste, and garlic paste.
  2. Combine all ingredients well until a uniform mixture forms.
  3. Scoop 1/4 cup of the mixture and shape into a round ball, then flatten gently to make a tikki. Repeat for the remaining mixture.
  4. Place the tikkis on a baking sheet or plate and refrigerate for 15 minutes.
  5. Heat oil in a frying pan over medium heat. Place tikkis in the pan without overcrowding.
  6. Cook each side for 8-10 minutes, then flip and cook the other side for the same time.
  7. Increase the flame at the end to crisp up both sides.
  8. Serve hot with mint chutney and tamarind chutney, garnished with fresh microgreens.
