For the Dim Sum Dough:

  • 100 grams of wheat starch
  • 100 grams of potato starch
  • 400 milliliters of water

Preparation Method:

  1. Begin by preparing the filling. Blend the edamame beans with water to create a smooth paste. Add mashed potato, salted butter, cream, and seasoning to the edamame paste, mixing thoroughly. Spread the mixture on a flat tray and steam for five minutes. Allow it to cool. Combine 100 grams of the filling with truffle paste in a bowl. Adjust seasoning, cling wrap the bowl, and refrigerate.
  2. To create the dough, mix wheat starch, potato starch, and water until it forms a smooth, elastic dough ball. Use a glass to cut circles from the dough and stack them.
  3. Lay out the dough circles, fill them with a generous tablespoon of the filling, and seal the dumplings in your preferred shape.
  4. Steam the dumplings for two minutes in a steamer. Garnish with shredded carrots and serve hot.
