Quick and Easy One-Pot Chhole Chawal Recipe

Enjoy a comforting and flavorful meal with this simple one-pot Chhole Chawal recipe. Perfect for busy weekdays or a cozy dinner, this recipe combines soft, spiced chickpeas with perfectly cooked rice in just one pot, making cooking and cleanup effortless.

Ingredients:

  • 1 cup rice
  • 2 cups boiled chickpeas
  • 1 finely chopped onion
  • 2 chopped tomatoes
  • Small piece of ginger
  • 4-5 garlic cloves
  • 2 finely chopped green chillies
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • Fresh coriander for garnish

Method:

  1. Heat 2 tablespoons of oil in a pressure cooker and add cumin seeds until they splutter.
  2. Add green chillies, grated ginger, garlic, and chopped onion. Sauté until the onion turns light brown.
  3. Mix in turmeric, red chilli powder, coriander powder, and garam masala. Stir for 30 seconds, then add chopped tomatoes and cook for 2-3 minutes.
  4. Add rice, boiled chickpeas, and 2 cups of water. Seal the pressure cooker and cook for one whistle.
  5. Garnish with fresh coriander and optional paneer. Serve with Greek yogurt raita made with grated cucumber and carrot for a complete meal.
