Sindhi Gheeyar is a traditional festive sweet loved for its crispy texture, vibrant color, and irresistible sweetness. This authentic dessert, popular during celebrations and special occasions, combines the richness of refined flour, curd, and sugar syrup with the aroma of cardamom to create a treat that’s both crunchy and syrupy.
Ingredients
- 1 cup refined flour
- ¼ cup curd
- 1 cup water
- A pinch of baking soda
- ¼ tsp orange food color
- 1 cup sugar
- 2 cardamoms
Preparation Steps
- Prepare the batter – In a large bowl, combine refined flour, curd, and orange food color. Gradually add water to make a smooth batter. Cover and let it ferment for about 8–10 hours.
- Make sugar syrup – In a pan, melt sugar in water, add crushed cardamoms, and a little orange food color for fragrance and color. Boil until slightly sticky in texture.
- Mix and pipe – Once the batter is fermented, stir in a pinch of baking soda. Pour the mixture into a piping bag and cut a small tip at the end.
- Fry the Gheeyar – Heat oil on medium flame and place a metal ring cutter in the pan. Pipe the batter into circular and zigzag patterns inside the ring. Fry until golden and crisp on both sides.
- Soak in syrup – Remove from oil and quickly dip the hot Gheeyar in sugar syrup for a few seconds, then take out and serve.
The result is a beautifully crisp and aromatic dessert with a delightful sweetness that melts in your mouth. Serve warm or at room temperature for a perfect festive indulgence.
