How To Prepare Traditional Winter Baingan Bharta

Ingredients (Serves 3–4)
1 large brinjal
2 tbsp oil
1 large onion finely chopped
2 tomatoes chopped
5–6 garlic cloves crushed
1-inch ginger grated
2 green chillies chopped
½ tsp cumin seeds
½ tsp turmeric
1 tsp red chilli powder
1 tsp coriander powder
Salt to taste
2 tbsp chopped coriander
Instructions
Grease brinjal roast until charred and soft. Cool peel and mash.
Heat oil, add cumin and onions sauté until golden.
Add garlic ginger chillies. Cook briefly.
Add tomatoes and spices cook until soft.
Mix in mashed brinjal cook 6–7 minutes.
Garnish with coriander and serve with roti paratha or bajra rotla.
