  • 2 cups whole wheat flour (atta)
  • ½ tsp ajwain (carom seeds)
  • 2 tsp oil
  • Water as required for kneading
  • Salt to taste
  • 3 tsp coriander seeds
  • 1 tsp fennel seeds
  • 1 tsp black pepper
  • ½ tsp turmeric powder (haldi)
  • ½ tsp amchoor (dry mango powder)
  • 2 dry red chilies
  • ½ tsp fenugreek seeds (methi)
  • 1 tsp cumin seeds
  • Ghee as required for layering and cooking

Step-by-Step Method

  1. Prepare the Achaari Masala
    In a pan, dry roast coriander seeds, cumin seeds, fennel seeds, fenugreek seeds, dry red chilies, mustard seeds, and black pepper on low heat until aromatic. Let them cool. Transfer to a blender and grind along with turmeric powder, amchoor powder, and salt to form a fine powder.
  2. Make the Dough
    In a mixing bowl, add wheat flour, ajwain, and salt. Gradually add water to knead a smooth dough. Brush with a little oil, cover, and let it rest for 10 minutes.
  3. Shape the Paratha
    Divide the dough into equal portions. Roll out one portion into a thin disc, spread ghee generously, and sprinkle the achaari masala. Cut into strips, twist them, roll into a peda, and then roll out again to form a layered paratha. Repeat with remaining dough.
  4. Cook the Paratha
    Heat a tawa (griddle) and cook each paratha with ghee until golden brown and crisp on both sides. Serve hot with pickle, yogurt, or curry.
